Includes grains and hops. Yeast, finings, nutrient, water salts and sugars are not included.

Lady Fermenter Baltic Porter brings a local creator’s malt-forward porter experiment to our All Grain Beer Kits collection. Brew her supplied grain bill with coffee malt, dark crystal, Munich, Vienna and pale chocolate malt, balanced by East Kent Goldings hops.

Recipe by Lady Fermenter. Ingredients supplied and packaged by TrueBrü. This is an independent creator recipe, not a TrueBrü-developed house recipe. TrueBrü supplied ingredients for her experiments; the recipe design and experimental results are hers.

Yeast sold separately

Yeast is not included. First recommendation: Omega Yeast OYL-012 Pacific NW Ale (liquid yeast, sold separately). Follow the strain’s fermentation and pitching guidance.

Dry yeast alternatives for the 6.08 gallon batch:

  • SafLager S-23 — two 11.5 g sachets; the dry yeast named in Lady Fermenter's notes.
  • SafLager W-34/70 — two 11.5 g sachets; a shop-offered alternative.

Add your chosen yeast to your order separately. Follow the temperature guidance for your selected strain.

Kit contents — 16.5 lb grain and 2 oz hops

  • 7.5 lb Prairie 2-row pale
  • 2.5 lb Simpsons Brown (Coffee)
  • 2.5 lb Weyermann Munich II
  • 2 lb Simpsons DRC
  • 1 lb Salzgitter Vienna
  • 12 oz Prairie white wheat malt
  • 4 oz current pale chocolate malt
  • Two sealed 1 oz East Kent Goldings hop packs

Printable Lady Fermenter recipe and brewing notes are provided for reference. Yeast and all extras must be purchased separately.

Freshly packaged to order. Choose grain preparation in the cart before checkout. The coffee and pale chocolate malts are kept in a separate mash-out bag, including on milled orders.

The kit uses stocked malt equivalents at the supplied weights. The export labels the wheat “Wheat - White Malt Raw”; this kit contains malted white wheat. Malt color and hop alpha acid can vary by lot.

Brewing schedule

Mash the main grist at 149°F for 60 minutes. Add the reserved coffee and pale chocolate malts as a cap during mash-out at 167°F for 10 minutes, following her notes. Boil for 60 minutes and add the included 2 oz EKG at the beginning. Her source lists Whirlfloc at 10 minutes; finings are not included.

For the two dry yeast choices, Fermentis lists an ideal range of 53.6–64.4°F and 80–120 g/hL. Two sachets provide about 100 g/hL at the source batch size. Colder fermentation or higher gravity may need more yeast. The original export’s generic 68°F / 14-day profile is not the temperature guidance for these options. Ferment until gravity is stable; allow additional time for maturation and conditioning.

With or without water additions

Water salts are not included. The recipe card records her optional RO-water treatment for one full source batch; purchase salts separately if using that treatment. It is not a universal water correction. Use the same starting water, recipe and process when comparing batches; a full-size side-by-side comparison requires two batches. Recalculate treatment for your water and equipment.

Mash pH: the source export predicts 4.62. That is not a recommended target or a measured result. Review your water plan and measure mash pH; do not add acid simply to match that figure. The recipe card retains the source water profile for reference.

Creator’s supplied estimates

  • Batch size: 6.08 US gallons into the fermenter; packaged yield will be lower
  • OG 1.070; FG 1.016; estimated ABV 7.1%
  • 26 IBU at 5% hop alpha acid; color 50 SRM
  • Grainfather G30 110V profile; 72% brewhouse / 75.1% mash efficiency

These are unverified software estimates, not promised results. The export contains no measured batch results. Recalculate for your own system and efficiency; lower extraction can reduce gravity and ABV. The optional sugar is not clearly accounted for in the source estimates.

Not included: yeast, Whirlfloc, Brewtan B, nutrient, water salts, table sugar, priming sugar, water or equipment. Her notes suggest 1 lb table sugar at flameout as an optional gravity boost. The export also lists 6.6 g Brewtan B at 15 minutes; verify its manufacturer dose before using it. Brewtan B is not currently offered as part of this kit.

Dry yeast: Grains and hops — yeast not included
