  • 2.5 lb dark Munich malt
  • 2 lb Crystal DRC
  • 1 lb Vienna malt
  • 12 oz white wheat malt

Yeast — sold separately

First choice: Omega Pacific NW Ale OYL-012.

Dry alternative: Fermentis SafLager S-23, as recommended in Lady Fermenter’s notes. Follow the pitching and temperature guidance for your chosen yeast.

Brew day

Mash the main grist at 149°F for 60 minutes. Add the crushed coffee and light chocolate malts together as a cap during mash-out at 167°F for 10 minutes. Boil for 60 minutes, adding all hops at the start.

With Omega Pacific NW Ale, the recipe calls for fermentation at 68°F for about 14 days. Confirm stable final gravity before packaging. The card includes optional water additions and the optional 1 lb table sugar addition at flameout.
