LD Carlson Potassium Bicarbonate is used in winemaking to reduce excessive acidity in wine or must. It reacts with tartaric acid and helps form potassium bitartrate, which can precipitate during cold stabilization.

Typical use: About 3.4 grams per gallon can reduce total acidity by approximately 0.1%. Use for modest acid adjustments, then cold stabilize and rack off the precipitated tartrate crystals.

Make a small trial addition before treating the entire batch.
