TRUEBRÜ American Amber Ale is our house all grain recipe kit for a modern, balanced American Amber Ale with layered toasted malt character and classic Cascade citrus.

This is not a heavy caramel bomb. Pale malt and Munich build the base, while amber malt, Victory, a restrained amount of Caramel 120L, and a touch of chocolate malt add bread crust, toast, color, and depth. Cascade keeps the finish distinctly American with clean citrus and floral character.

Each kit is packaged fresh to order. We build these from our current bulk grain and hop inventory instead of keeping prepacked kits sitting on the shelf. Because the kit contains grain, our normal grain preparation prompt will appear in your cart so you can choose how you want the grain prepared before checkout.

Recipe targets:

  • Batch size: 5.5 gallons
  • Expected finished beer: about 5 gallons
  • Original gravity: 1.052
  • Final gravity: 1.012
  • ABV: approximately 5.3%
  • IBU: 32
  • Color: 13 SRM
  • Brewhouse efficiency: 68%
  • Mash: 152°F for 60 minutes
  • Boil: 60 minutes

Kit includes:

  • 11.56 lb complete grain bill
  • 3 oz Cascade pellet hops
  • Complete recipe and brewing schedule

Yeast is not included. The recipe was developed around Omega OYL004 West Coast Ale I. It is a clean American ale strain that keeps the focus on the malt and Cascade character.

Other excellent choices are Omega OYL009 West Coast Ale II, for Dry yeast use SafAle US 05, or CellarScience CALI American Ale.

Water salts are not included. The recipe card includes the water target and mineral additions used to build the recipe from RO water.

Fermentation: Start around 66°F, then allow the beer to finish around 70°F. The goal is a clean fermentation that preserves the toasted malt profile and classic American hop character.

Flavor profile: toasty, bready, balanced, lightly caramelized, with a touch of roast and Cascade citrus. It is designed to land squarely in American Amber Ale territory without becoming overly sweet or caramel heavy.
